Fumonisins

(584) These are produced by the fungus Fusarium moniliforme growing in corn (maize) and the toxins cause excess fluid to leak out into lung tissue (pulmonary oedema). This is a recently recognised uncommon disease called the porcine pulmonary oedema syndrome. Toxins also have a mild effect on the liver resulting in jaundice and orange-yellow coloured lesions evident at post-mortem examination. It usually takes five to ten days of continual exposure for the signs of acute respiratory distress, cyanosis (blue colour) of the skin, jaundice, high morbidity and mortality to appear.
